Tri-Color Coleslaw

Yields1 Serving

 2 cups purple cabbage, shredded
 3 cups green cabbage, shredded
 1 cup shredded carrot
 ¼ cup apple cider vinegar, unfiltered
 1 tbsp lemon juice
 1 tsp salt
 ½ tsp onion powder
 2 dashes garlic powder
 ½ cup vegan mayo

Mix cabbage and carrots evenly in a large bowl.


Combine all remaining ingredients in a separate bowl to create the dressing.


Combine dressing and veggies. Adjust salt and pepper to taste. Let sit for at least 10 minutes before serving.


WING IT: A few tbsp of fresh cilantro is a nice touch! Also, if you like a creamier, sweeter slaw...reduce ACV by half and add 1/4 cup more mayo + a pinch of cane sugar. Get crazy!
