Hash Brown Soup

 40 oz (2 bags) Hash Browns
 4 cups (1 box) Veggie Broth or Chickenless Broth
 1 cup non-dairy milk
 1 Violife Cheddar Shreds (about 2C)
 2 tbsp Onion Powder
 1 tsp Black Pepper
 1 tbsp Sea Salt (more or less to taste)
 2 tbsp Minced Garlic
 1 cup Tofutti Sour Cream
 1 dash Optional Toppings: Scallions or Leeks, Bac-Un Bits, Jalapeno, Red Pepper...just wing it!

Put all that ish into a big crockpot and let it roll on high for 4 or so hours.

No time? No problem: You can also steam in your Instapot for 1 hour. Honestly...I used the "sauté" feature on my Insatapot Grain Cooker (which I have because I suck at cooking rice) for 1 hour. There was an option for high or low, and I chose high. SO EASY! I am sure you could also just cook on the stovetop on low for an hour.

Add optional toppings and enjoy. Literally that easy. You can add more or less cheese, broth, water, taters...etc. Add leeks during the cooking process...it doesn't really matter. This is pretty hard to mess up! If its too soupy for you...add a little starch or cook it longer.
