Confession: I’m a condiment freak, spice lover and a cilantro addict.  Needless to say, I could bathe in spicy chimichurri.  This version replaces the oil with fresh avocado and lime juice for a Whole Foods Plant Based treat! Toss it over a mushroom steak and BOOM! Flavor explosion!

 1 Bunch Flat-Leaf Parsley (Roughly 2 Cups)
 1 Bunch Cilantro (Roughly 2 Cups)
 1 Juice of a Lime
 2 tsp Clove of Garlic (or 2 tsp Crushed)
 1 tbsp Apple Cider Vinegar (Red Wine Vinegar also Works)
 1 Avocado, Small
 Salt & Pepper (1/2 tsp Salt Recommended to Start)
 ½ Jalapeño, Seeded (Optional)

Place all ingredients into food processor. Blend until smooth & creamy.

Enjoy as desired! Over mushroom steaks (our favorite!).. mixed into rice... on potatoes..with fajitas... the possibilities are endless!

Tip: Our favorite combo is chimichurri over portobello mushroom steaks. We usually WING IT.. but often go for a simple marinade of: balsamic, Worcestershire, Braggs Aminos, smoked paprika, onion and garlic. Just grill (or griddle) the shrooms 4 minutes per side on medium-high heat. Honestly, any ratio/combo of these seasonings + portobello mushroom - ya really can’t go wrong. Don’t overthink it, just wing it! Make it yours! 😀😀😀
